Parma ham and Melon Summer salad with whipped Feta



This is the perfect light, refreshing and delicious little appetizer or snack. The combination of the sweet fruit, creamy whipped feta, and salty richness of the Parma ham will make your taste buds oh-so-happy.


It is just so quick and easy to prepare. You can serve these as individual servings, or in a flat salad dish with fresh flatbread on the side.


You’ll need:


· Measuring spoons

· Melon baller

· Electric mixer

· Medium-sized mixing bowl





Ingredients:


For the salad:


100g Thinly sliced Parma ham

½ Cantaloupe melon

½ Honeydew melon

¼ Watermelon

2-3 Sprigs of fresh mint


For the whipped feta:


250g Plain soft Feta cheese

100g Double cream plain yogurt

1 Tbsp Lemon juice

½ tsp Lemon zest

Ground pepper to taste


Method:


To prepare the whipped feta, combine all the ingredients in a mixing bowl and whip together until fluffy and well combined. Add ground pepper to taste.


Using a melon baller, scoop out balls of the different melons. Removing the seeds as you go. Cover with cling wrap and refrigerate until it's time to serve.


To serve, spoon about two tablespoons of the whipped feta into the bottom of a glass or ramekin. Top with the different types of melon balls. Finely cut the mint leaves and sprinkle them over the melon balls. Add two ribbons of Parma ham to each serving.

Serve with a small wedge of lemon and enjoy with a warm sliced flatbread.
