Green Eggs and Ham Rollups



The short and sweet of this is that you might find it a bit strange, but you’ll end up loving it – just ask Sam-I-Am.


It can at times be challenging to find snacks that are low-carb, yummy, and at the same time interesting. Low-carb snacks don’t just have to be meatballs and carrot sticks.

An added bonus to these is that they’re gluten-free and high in protein. The sneaky addition of baby spinach provides a source of vitamin K, folate, and iron. This is great if you’re feeding anyone who fights against eating their greens.


You’ll need:


· Blender/Nutribullet

· Measuring spoons

· Chopping board and knife

· Non-stick pan



Yields ±8 rollups)


Ingredients:


2 large eggs

1 cup Baby Spinach

3 Tbsp Plain smooth Cottage Cheese

± 100g Portobello Mushrooms, diced

3-4 Slices of Smoked Ham (or any of your choice)

1 tsp Olive Oil

1 tsp Black and white sesame seeds (optional)

Pinch of Powdered garlic (optional)

Pinch of Salt and pepper


Method:


In a non-stick frying pan, heat up half a teaspoon of olive oil. Sautee the mushrooms with the powdered garlic until soft. Set aside to cool.


Add the eggs and baby spinach to your blender and blitz until the spinach leaves are completely blended into the eggs.


Wipe clean the pan you used for the mushrooms and add the remaining half teaspoon of olive oil and heat over a low flame. Once the oil is warm, add the egg and spinach mixture to the pan. Swirl the pan around to cover the base, as if you’re making a pancake.

This will cook very quickly; 1 to 2 minutes and it will be ready to flip over onto a plate.


While the egg “pancake” cools down slightly, add your cooked mushrooms to the blander and blitz into a chunky paste-like consistency.


Spread cottage cheese over the surface of the egg “pancake”, add and evenly spread put the mushrooms, top with slices of ham. Roll up the “pancake” into a log.


Sprinkle the plate with sesame seeds and roll the log over the seeds.


Cover the log with cling wrap and refrigerate for 20-30 minutes. This will make it easier to cut into little wheels.


Slice the log into eight even wheels and serve as is.
